| How Campus Meals Fight Climate Change |
| The urgency for global climate action is underscored by the United Nations Secretary-General’s explicit call for a 1.5-degree Celsius reduction in global temperatures. The message is unequivocal: without transforming our food systems, we cannot achieve the global climate goals essential for our planet’s survival. Universities stand as pivotal players in this urgent landscape. Located in both urban and rural centers, they are trusted institutions with a dual identity: not only are they institutions of academic excellence and research, but they are also operational powerhouses. Integral to this operational capability are Auxiliary Services, which focus on the non-academic segment of higher education. These services generate business through various campus services such as food, bookstores, housing, and transportation. They advance campus environments to improve the quality of life for students and are a critical component in university operations. This unique positioning allows them to act as living labs in climate action, transforming dialogue into scalable, place-based solutions that include serving millions of meals annually. This session aims to spotlight the transformative role that Auxiliary Services within universities can play in climate action, particularly through their food programs. By combining cutting-edge science, academics, and youth engagement with operational strengths, Auxiliary Services can deliver robust, scalable solutions. |
